  • Cooking wine (such as Shaoxing wine): 1 tablespoon
  • Vegetable oil: for frying
  • Salt: to taste
  • Sugar: 1 teaspoon (or to taste)
  • Cornstarch: for dusting (optional)

Instructions:

  1. Prepare the Tripe: Clean the tripe thoroughly by rinsing under running water and removing any excess fat or unwanted parts. Soak the tripe in cold water with vinegar and salt for about 30 minutes to help remove any lingering odor.
  2. Boil the Tripe: Bring a pot of water to a boil and add the cleaned tripe. Boil for about 15-20 minutes or until it becomes tender enough to cut easily. Drain and let cool slightly.
  3. Slice the Tripe: Once cooled, slice the tripe into strips or bite-sized pieces depending on your preference.
  4. Marinate: Toss the sliced tripe with a little bit of soy sauce, sugar, and cornstarch if using, to help coat and flavor the pieces.
  5. Saute the Aromatics: Heat vegetable oil in a wok or large skillet over medium-high heat. Add the minced garlic, ginger, Sichuan peppercorns, and dried chili peppers. Stir-fry until fragrant.
