China is really the “culinary capital of world”,Sizzling beef short ribs, also known as “sizzling ribeye” or “sizzling beef,” is a popular and flavorful Chinese dish. The key to this dish is marinating the beef to infuse it with flavor and then cooking it quickly at a high temperature to achieve a sizzling effect. Here’s a step-by-step guide to cooking this delicious meal:

Ingredients:

  • Beef Short Ribs: 500g (cut into thin slices, about 1/4 inch thick)
  • Ginger: 1-inch piece, finely minced
  • Garlic: 3-4 cloves, finely minced
  • Scallions: 2-3, finely chopped (white and green parts separated)
  • Soy Sauce: 2 tablespoons
  • Oyster Sauce: 1 tablespoon
  • Hoisin Sauce: 1 tablespoon
  • Shaoxing Wine (Chinese Cooking Wine): 1 tablespoon
  • Dark Soy Sauce: 1 teaspoon (for color)
  • Sugar: 1 teaspoon
  • Cornstarch: 1 tablespoon (mixed with 1 tablespoon water to make a slurry)
  • Vegetable Oil: 2-3 tablespoons
  • Sesame Oil: 1 teaspoon
  • Black Pepper: 1/2 teaspoon, freshly ground
  • Water or Beef Stock: 1/4 cup
  • Optional Vegetables: Bell peppers, onions, or mushrooms, sliced (for added texture and flavor)

Instructions:

1. Marinate the Beef:

  • In a large bowl, combine the beef slices with 1 tablespoon of soy sauce, 1 tablespoon of Shaoxing wine, 1 teaspoon of dark soy sauce, 1 teaspoon of sugar, 1 teaspoon of sesame oil, 1/2 teaspoon of black pepper, and half of the minced ginger and garlic.
  • Mix well to ensure the beef is evenly coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for better flavor.

2. Prepare the Sizzling Platter:

  • Preheat a cast-iron platter or a heavy skillet in the oven at 400°F (200°C) for about 10-15 minutes. This will help create the sizzling effect when you add the hot ingredients.

3. Cook the Beef:

  • Heat 2-3 tablespoons of vegetable oil in a wok or large skillet over high heat.
  • Add the remaining minced ginger and garlic, and stir-fry for about 30 seconds until fragrant.
  • Add the marinated beef and any optional vegetables. Stir-fry for 2-3 minutes until the beef is nearly cooked through.
  • Add 1/4 cup of water or beef stock, 1 tablespoon of oyster sauce, and 1 tablespoon of hoisin sauce. Stir to combine.
  • Add the cornstarch slurry and stir-fry for another 1-2 minutes until the sauce thickens.
  • Remove from heat and add the white parts of the scallions. Stir to combine.

4. Serve Sizzling:

  • Carefully remove the preheated platter from the oven and place it on a heat-resistant surface.
  • Quickly transfer the hot beef and sauce onto the preheated platter. The sizzling sound and steam should be immediate.
  • Garnish with the green parts of the scallions.
  • Serve immediately while the platter is still sizzling.

Tips:

  • Thin Slices: Make sure the beef is cut into thin slices to ensure it cooks quickly and remains tender.
  • High Heat: Use high heat when stir-frying the beef to get a nice sear and keep the meat juicy.
  • Preheating the Platter: Preheating the platter is crucial for the sizzling effect. Make sure it is very hot before adding the beef.
  • Vegetables: Adding some colorful and crunchy vegetables like bell peppers or onions can enhance the dish’s texture and flavor.
