Ingredients

For the Milk Filling

  • 2 large eggs
  • 100 grams (1/2 cup) granulated sugar
  • 250 milliliters (1 cup) whole milk
  • 30 grams (1/4 cup) all-purpose flour
  • 30 grams (1/4 cup) cornstarch
  • 30 grams (2 tablespoons) unsalted butter
  • 1/2 teaspoon vanilla extract (optional)

For the Dough

  • 250 grams (2 cups) all-purpose flour
  • 120 milliliters (1/2 cup) warm water (about 40°C or 104°F)
  • 15 milliliters (1 tablespoon) vegetable oil
  • 1/4 teaspoon salt

For Frying

  • Vegetable oil (for deep frying)

Instructions

Step 1: Prepare the Milk Filling

  1. Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour and cornstarch.
  2. Mix Wet Ingredients: In another bowl, beat the eggs and granulated sugar until well combined. Add the milk and mix well.
  3. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, whisking continuously to avoid lumps.
  4. Cook the Filling:
    • Pour the mixture into a non-stick saucepan and place it over medium heat.
    • Stir constantly with a wooden spoon or spatula until the mixture thickens and forms a smooth, creamy custard (about 5-7 minutes).
    • Remove from heat and stir in the softened butter and vanilla extract (if using).
    • Transfer the custard to a bowl, cover with plastic wrap (touching the surface to prevent a skin from forming), and refrigerate until completely cooled and firm (at least 2 hours or overnight).

Step 2: Prepare the Dough

  1. Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour and salt.
  2. Knead the Dough:
    • Make a well in the center of the dry ingredients and pour in the warm water and vegetable oil.
    • Mix with a wooden spoon or your hands until a dough forms.
    • Turn the dough out onto a lightly floured surface and knead for about 8-10 minutes until the dough is smooth and elastic.
  3. Rest the Dough:
    • Place the dough in a greased bowl, cover with a damp cloth or plastic wrap, and let it rest for 30 minutes.

Step 3: Assemble the Rolls

  1. Divide the Dough: After the dough has rested, divide it into 12-16 equal pieces, depending on the size you prefer.
  2. Shape the Rolls:
    • Roll each piece of dough into a small, thin oval or rectangular shape.
    • Place a spoonful of the chilled milk filling in the center of each dough piece.
    • Fold the dough over the filling, tucking in the sides, and roll it up like a spring roll. Seal the edges with a little water or egg wash to ensure they stay closed.
    • Place the assembled rolls on a tray lined with parchment paper.

Step 4: Fry the Rolls

  1. Heat the Oil: In a deep fryer or a large, heavy-bottomed pot, heat enough vegetable oil to deep-fry the rolls. The oil should be heated to about 170°C (340°F). You can test the temperature by dropping a small piece of dough into the oil; if it sizzles and rises to the surface, the oil is ready.
  2. Fry the Rolls:
    • Carefully place a few rolls into the hot oil, being careful not to overcrowd the pot. Fry in batches to maintain the oil temperature.
    • Fry the rolls for about 3-5 minutes, or until they are golden brown and crispy.
    • Use a slotted spoon or a spider strainer to remove the rolls from the oil and place them on a plate lined with paper towels to drain excess oil.

Serve

  • Allow the fried milk rolls to cool slightly, then serve them warm. They are best enjoyed fresh and can be dusted with powdered sugar or drizzled with honey for extra sweetness.
